Squat Fuyu types can be eaten firm. Pointed Hachiya types must be jelly-soft or they taste chalky.
Ripening at home
Hachiya types can take a week or more on the counter to turn soft. Fuyu types are ready when bought.
How to store
Ripen on the counter. Ripe fruit keeps 2 to 3 days in the fridge.
